In addition, it is necessary to remind yourself that after the marathon of work, there are vacations and Christmas holidays with the best treats! There is an amazing dessert that you should make for this year and allow yourself to indulge with the sinfully sweet bites!
Plans Can Be Changed
Originally, it is a cake with pecans and bourbon. But as usually things are done on the last minute before holidays. So, that was my story: I did not find pecans in any supermarkets and I bought walnuts. I was sure I found a sip of whiskey in the spirit cabinet, but the memory was wrong. Luckily, I found brandy and it might be working. Finally, I noticed that the dough needed to be refrigerated for a few hours and I did not have time. In the end, it was just a miracle that this cake was simply divine despite all the obstacles.
A small piece of this cake with a cup of strong coffee is something sinfully delicious. The most important thing is that the eyes would not be too big, because the cake is very sweet. Of course, the biggest sweets-lovers could eat a few big chunks easily.
To make the basis of the cake you are going to need 125 g of cold butter, 1 tbsp apple cider vinegar, 1/4 cup of icy water, 195 g of flour, 1 tbsp sugar, and 1/2 tbsp salts. The filling is more complex, so you need 1 and a half of cup of chopped walnuts, 55 g of butter, 1 cup sugar, 1 cup light sugar syrup, a pinch of salt, 3 eggs, 2 tbsp brandy, a few drops of vanilla extract, 120 g of dark chocolate, 2 cups of whole walnut.
Prepare the dough for the base of the cake. Cut the butter into small pieces. Mix flour, sugar, and salt. Add the diced butter and rub between your fingers until you get the fine crumbs. Add a mixture of water and vinegar. Wrap the kneaded dough in a film and keep in the fridge until the filling is ready.
Prepare the cake filling. Spread the chopped nuts evenly on the pan and cook, stirring occasionally, for about 8-10 minutes. Add butter and melt over medium heat until the butter turns brown. Remove the pan from the heat and leave to cool slightly. In a large bowl, whisk in the sugar syrup, sugar, and salt. Stir in the warm butter, eggs, brandy, vanilla extract.
Prepare the cake. Roll out the dough from the refrigerator between two sheets of baking paper in a circle about 3 mm thick. Lightly grease the baking tin, add the dough, and press lightly against the bottom and walls with your fingers. Spread the roasted walnuts, spread the chopped dark chocolate over the nuts. Carefully pour the butter and syrup mixture on top of the whole nuts. Bake in a preheated oven for about 45-50min.
